Crepes Suzette

Notes:

This is a truly awesome desert, very rich and fattening. But worth every calorie.

Ingredients:

***Crepes***
4.5 oz Flour
0.5 oz Sugar
2 Eggs
5/8 Pint Milk (Boiled and cooled)
3.5 oz heavy Whipping Cream
1 Tbl Grand Marnier
Pinch of salt

***Sauce***
6 Sugar Cubes
6 oz Butter
6 oz Sugar
2 Oranges
4 Tbl Grand Marnier

Method:

Crepes:
1. Mix flour, sugar and salt in a bowl
2. Stir in eggs 1 at a time with a wooden spoon
3. Pour in 1/3 of cooled milk and mix well
4. Stir in Cream, remaining milk, and grand marnier. Mix well
5. Cover bowl with a plate and let sit for at least 1 hour

Cooking Crepes:
1. Brush small pan with Butter
2. Ladel batter into heated pan
3. Tilt pan to spread batter thinly over baking surface
4. Cook Crepes for approx 1.5 minites each side. Set Cooked Crepes aside

Sauce:
1. Rub Sugar Cubes on the peel of orange to soak up juices
2. with wire wisk, mix butter and sugar over low heat until butter is melted and sugar is dissolved
3 Add Grand Marnier and Sugar Cubes continue stirring

Serving:
1. Squeeze orange Juice into pan, set over high heat and reduce heat by half
2. Beat Sauce mixture into Orange juice, Bring to boil
3. As soon as mixture starts to boil, take a fork and place a crepe into the sauce and then fold into 4's.
4. Place 3-4 Creps on a plate for a single serving.
