Chicken Pad Thai

This is a nice little ditty if you like good Thai food. I have always had a fondness for this particular dish and so have developed my own recepie. You can make this as mild or hot as you like by adding more or less red pepper. it is traditionally a mild dish.

Ingredients:

1 Tsp Oil (olive or veggie)
1 Clove Garlic
2 Oz Bean Sprouts
2 oz fish Sauce
2 oz Peanut Sauce
1 egg,(beaten)
1-2 boneless, skinless chicken breasts
3 bundles Shallots (15 or so)
1 lemon
Red pepper to taste
1/4 lb Rice noodles
1/2 cup crushed unsalted peanuts

Method:

1. Boil Noodles, drain and set aside
2. heat oil in Wok
3. brown garlic
4. heat chicken in Wok over moderate heat until almost fully cooked, reduce heat
5. Place chopped shallots, crushed red pepper, fish sauce and peanut sauce into wok, mix well
6. Add Beaten egg into mixture, let egg cook
7. Place noodles on plate and pour mixture over them. add Bean sprouts, over top
8. squeeze Lemon over dish and add crushed peanuts on top.
