Vegetarian sushi is one way for regular omnivores to sample sushi without having to be tough stomached about it. Fried egg with a bit of sea weed wrapped around it is at the bottom. Then Inari sushi, which is soybean made into tofu, then deep fried and then called aburage, then that is sliced down the middle and then marinated, then the sushi rice (which is just rice with sugar and vinegar cooked into it) is jammed into these soybean sacks. Picked daikon root, like a radish, pickled ginger root and something like spinach go into the Norimaki, the sea weed wrapped jellyroll thing.  Odds and ends are pickled (start to see a trend with this pickled vegetable thing?) A little soysause and wasabi (a neon green mustard that is not for the faint at heart) and you're ready to roll.
