Peanut Butter Pie
mmmmmmmm!!!!
I got in the mood for peanut butter pie last year around Thanksgiving and went on a searching spree to find a good recipe for one. It was harder than I thought it would be too! I wanted an easy, chilled pie. I finally found one, but I didn't have all the exact ingredients...so, I'll once again give you both versions so you can decide for yourself . They are both very good too! I ended up making 4 of these pies last holiday season!
The first recipe called for a crust you make yourself by the following:
crust:
1 1/4cups chocolate cookie crumbs
1/4 cup sugar
1/4 cup butter or margarine, melted
filling:
1 package (8 ounces) cream cheese, softened
1 cup creamy peanut butter
1 cup sugar
1 tablespoon butter or margarine, soft
1 teaspoon vanilla
1 cup heavy cream, whipped
grated chocolate or chocolate cookie crumbs, optional
....................................................
combine crust ingredients, press into a 9 inch pie plate, bake at 375 for 10 minutes. cool. in a mixing bowl, beat cream cheese, peanut butter, sugar, butter and vanilla until smooth. fold in whipped cream. gently spoon into crust. garnish with chocolate or cookie crumbs if desired. refigerate. yeild: 8-10 servings.
My version:
crust:
any store bought crust of your choice. :)
filling:
the only difference is instead of adding the heavy whipping cream, add about a 1/2 cup of sour cream and a 1/2 cup of whip cream (like Cool Whip). continue the recipe the same as above. :)
I came up with this because when I went to make my first pie, I didn't have the heavy cream....so I improvised..........and i think it tasted good! Enjoy!
