Spinach Quiche
Now, i know some might think.....ooooo yuk!, but believe me, i didn't think i'd eat spinach either til i had this!
2 frozen pie shells (8")
1/2 cup diced and sauteed yellow onion
3/4 C. shredded cheddar cheese
3/4 C. shredded jack cheese
3/4 C. shredded mozerella
1 10oz package frozen chopped spinach or
1 15oz can of chopped spinach (either must be well drained!)
1 8oz package of cottage cheese
3 eggs
few dashes of salt and pepper
Go ahead and bake your empty pie shell according to package directions. you don't want to get it very well done! just a light golden brown.
mix together the spinach (well drained) and cottage cheese, eggs, onion, salt and pepper.
sprinkle the cheddar and jack cheeses into the bottom of the two pie shells. Pour the spinach mixture on top of it (dividing between the two pies of course. :) sprinkle the mozerella on top evenly.
place into oven at 350 degrees for about 50 minutes. (yep, 50)
it's best to cover the edges with a pie crust cover so that they won't burn (if you don't have one, try this...take an aluminum pie plate and cut out the bottom of it, leaving only the sides and rim. place this upside down over your quiches...it'll look like you've placed a pie upside down on your quiche! LOL) this will protect your edges.
let it cool slightly once it's done, also the longer you let it set, the more firm it will become.
Hope you like!
