Caprese Salad
From the Kitchen of Karen

Plum tomatoes
Cucumber
Fresh mozzarella
Extra virgin olive oil
Basil confetti

Garlic, crushed
Coarse salt

Cut plum tomatoes, cucumber and fresh mozzarella into bite-sized pieces and place in salad bowl. Remove basil leaves from stems, stack in a pile, roll tightly, and cut thin strips to make confetti. Place in bowl. Drizzle all with extra virgin olive oil, crushed garlic and coarse salt to taste. Toss and enjoy at room temperature.
