Fresh Fruit Pizza

1 (20 oz.) roll refrig. sugar cookie dough
8 oz. cream cheese softened
1/3 cup gran. sugar
1 tsp. vanilla extract
Assorted colorful fruit
1 (10 oz.) jar peach or apricot preserves

Preheat oven to 350F. Lightly grease round pizza pan. Cut cookie dough into 1/8 inch slices; seal dough edges together to make crust (leave space at edge of pan, unless it has sides). Bake until light brown 15-18 min.; cool.

In bowl, combine cream cheese, sugar & vanilla; mix until smooth. Spread over cooled crust. Arrange fruit in decorative pattern on top of cream cheese mixture. Heat jelly until slightly runny. Carefully spoon over fruit to glaze. Refrigerate until ready to serve.

10-12 servings; Prep. time: 25 min.; Cooking Time: 15-18 min.
