Grill Roasted Garlic

4 heads garlic
2 tbsp olive oil
1/2 tsp thyme
1/2 tsp salt
1/4 tsp ground pepper
French Bread Stick; sliced 1/2 inch thick
Brie cheese; sliced 1/4 inch thick

Slice off the top 1/4 inch from each garlic head to expose top of cloves. Rub off some of the outer loose papery skin, leaving the heads intact. In a small bowl, combine the garlic heads, olive oil, thyme, salt & pepper. Toss to combine & coat the garlic evenly; marinate in fridge for 24 hours. Place the garlic heads on square of foil on grill rack 4-6 inches above medium heated coals. Cook, turning the garlic 3 or 4 times, until the cloves feel soft; 35-40 min. Remove from grill and serve warm. Place a slice of brie cheese on french bread slices and squeeze garlic clove on top, spreading with fork onto cheese.
