Sausage & Pasta Casserole

1 pound italian sausage (mild)
6 Tablespoons olive oil
1/2 cup coarsely chopped onions
1 clove of garlic (finely chopped)
6 Sun-dried tomatoes (cut into 1/4" strips)
1/2 cup of boiling water
1 box of farfalle pasta (bow tie)

Remove sausage from casing - brown and cook thoroughly in frying pan. Transfer to a plate. Add olive oil to fry pan - heat and add onion. Cook until golden (approx 5 min). Add sausage and garlic - cook a few minutes. Cook 1 pound of pasta according to directions. Place sun-dried tomatoes in a bowl with the boiling water and let stand. Drain pasta, add tomatoes with water, add one tablespoon of parsley, add sausage, onion, garlic combination and mix all well. Serve immediately.
