Taco Roll Ups

8 flour tortillas
1 8 oz. Package light cream cheese (softened)
1 cup sour cream
1 cup shredded cheddar cheese
1 can 4 oz. Chopped green chillies – well drained
½ cup chopped scallions
1 cup chopped tomatoes – dry with paper towel
1 4 oz. Can sliced black olives – well drained

Mix all ingredients (except tortillas) together in a bowl. Spread evenly over tortillas, then roll up. Wrap tightly in saran wrap and refrigerate several hours or overnight. Slice.

Variation: mix a tablespoon of dry taco seasoning into softened cream cheese before mixing.
