Zucchini Quiche
From the Kitchen of Sandi

2 cups grated zucchini
1/2 cup liquid oil
4 eggs - beaten
1 small onion - chopped
1/2 tsp. parsley - fresh or flakes
1 carrot - grated
1/2 cup grated Parmesan cheese (plus extra for top)
Salt and Pepper
Garlic powder to taste
1 cup Jiffy/Bisquick all purpose baking mix

Mix all of the above together in a medium bowl. Pour mixture in greased baking dish. Sprinkle top with extra Parmesan cheese and black pepper. Cook in 350F oven for 40 minutes or until golden brown. Let stand 10 minutes before serving. Leftovers warm up in the microwave just fine. Wonderful for a brunch or a light meal.
