Pina Colada Cake

Ingredients:

  • 1 pkg yellow cake mix

  • 1 pkg instant vanilla pudding mix

  • 1 can Cream of Coconut

  • 1/2 cup plus 2 tbsp rum

  • 1/3 cup vegetable oil

  • 4 eggs

  • 1 can crushed pineapple (11 oz)

Preparation:

  • Preheat over 350 degrees

  • Combine cake mix, pudding mix, 1/2 cup cream of coconut, 1/2 cup rum, oil and eggs.

  • Beat for 2 minutes on medium speed

  • Stir in drained crushed pineapple

  • Pour into well greased and floured tube pan (I used a 11x17 pan)

  • Bake for 50-55 minutes

  • When cool poke holes 1" apart in cake almost to the bottom

  • Combine cream of coconut and 2 tbsp of rum and pour over cake

  • Store in the refrigerator
