Banana Wafers

Ingredients
2 raw green bananas
1 teaspoon black pepper powder
salt to taste
oil for frying
Sauce
crab paste
fish sauce
lemon pepper

Method
Remove the skin from bananas and cut into about ¼ inch thick slices in a crosswise manner. Heat oil in a frying pan and fry the
slices until crisp. Remove from frying pan and place on a plate covered with paper towels. Sprinkle salt & pepper over the fried
slices while they are hot. Serve with tomato ketchup.

Concido or Nilaga

Ingredients
1 pound lean beef, cut 3x2 inches
1 pound lean pork, cut 3x2 inches
1 ham bone
1 small chicken (2 to 3 pounds) cut up
1 teaspoon peppercorns
salt to taste
8 cups water
1 large, or 4 very small onions, quartered
1 teaspoon minced garlic
3 bouillon cubes
6 sprigs parsley, tied in a bundle (to discard later)
1 bay leaf
1/2 pound green beans, tied in a bundle
2 leeks, cut in 3 inch lengths and tied in a bundle
3 carrots, cut in 3 inch lengths and tied in a bundle
red potatoes (8 small or 2 large, quartered)
small cabbage, cut in wedges

Method
  1. In a deep pot, cook together the first 12 ingredients.
  2. Simmer until meats are almost tender, skimming off fat as it rises to top.
  3. Add the remaining 5 vegetables.
  4. Simmer until vegetables are tender.
  5. Remove meat and vegetables with a slotted spoon and arrange attractively in sections on a large platter.
  6. Serve soup on the side to be dished out in soup bowls.
