Then the women put all the grains, still covered by the tan protective casing, onto a big flat bamboo basket and flip all the grains up into the air in front of a fan. The wind from the fan blows off the cases while the heavier white grains of rice fall back into the basket.

Before they had fans, they just had to wait for a windy day. The whole process takes a lot of work. In America, we do all this with huge machines, in Vietnam they still do it by hand.
