Beltane
May 1st
Then let us welcome lovely spring,
And still the flowery tribute bring,
And still to thee our carol sing,
O lovely May!

Popovers
2 eggs
1 cup flour
1 cup milk
1/4 teaspoon salt

For best results, beat eggs slightly then add milk, flour and salt. Whisk quickly until smooth (2 minutes), so the batter has the consistency of heavy cream. (I do not recmmenan electric beater.)
Divide batter into a well gresed muffin pan. Baking in a preheated oven of 425 degrees for 40 minutes. Serve at once, filled with any type of fruit, cream, etc.

Candied Violets
1 egg white
Granulated sugar
Violets

Whip your egg white until it is frosty, but does not peak. gather the violets, washing them quickly in cool water and allowing them to drip dry. Then, dip each violet in the egg white and rool flowers in the sugar to coat them evenly. Be careful not to put sugar on too thick.  Finally, leave the petals on waxed paper to dry for 1 day. These may be stored for several months in an airtight container (waxed paper between each layer) without losing fragrance or flavor.
