Green Chili Bites
- 2 4-oz. cans whole green chilies, sliced and opened 
- 2 cups Monterey Jack cheese, grated 
- 2 cups Cheddar cheese, grated 
- 6 eggs, beaten 
- salt and pepper to taste 
Instructions:
Preheat oven to 325 deegrees. Butter a 8" or 9" square 
baking dish. Arrange chilies on bottom of baking dish. 
Mix grated cheeses together and sprinkle over chilies. 
Blend eggs, salt and pepper; pour over cheese and chilies. 
Bake for 30-40 minutes or until firm. Cut into squares and 
serve hot. Makes 20 squares.
