Perfect Hot Chocolate

• 4 cups milk
• 1 teaspoon pure vanilla extract
• 10 ounces best-quality bittersweet or semisweet chocolate, chopped

Instructions:
Combine milk and vanilla in a saucepan; scald the milk over medium-low heat. Add chocolate, and whisk until chocolate is completely melted and milk is frothy. Serve immediately.
