Banana Bread 2
- 1/2 cup (1 stick) butter
- 1 cup sugar
- 2 eggs
- 1 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1-1/4 cups mashed very ripe bananas
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- Nonstick cooking spray
Instructions:
1. Beat butter and sugar until creamy. Add eggs and beat until incorporated.
2. Sift together all-purpose flour, whole-wheat flour, baking soda and salt. Combine bananas, sour cream and vanilla.
3. Add flour mixture to butter mixture and mix. Stir in banana mixture, then fold in chocolate chips. Pour into 9x5-inch loaf pan sprayed with nonstick cooking spray.
4. Bake at 350ºF. until toothpick inserted in center comes out clean, about 1 hour.
10 to 12 servings.
