Easy Cherry Cheese Danish
Pastry:
- 2 cups flour
- 2 sticks butter
- 1/2 pint sour cream
Mix like pie crust and refrigerate overnight or freeze for 1 hour. Roll out into large rectangle. Cut into 5 inch squares. Place cheese filling in center of each square and fold up corners to meet in the center and slightly overlap. Bake 35 minutes at 350 degrees. Top while warm with 1 tablespoon of cherry topping. You may drizzle with icing.
Cream Cheese Filling :
- 1 cup whipping cream
- 1 cup powdered sugar
- 8 oz cream cheese, softened
- 1 teaspoon vanilla
Beat all ingredients until soft and fluffy.
Cherry topping: (for a short cut you can use canned pie filling)
- 2 cups pie cherries
- 1 cup sugar
- 1/4 cup cornstarch
- 1/2 teaspoon almond extract
Bring cherries, sugar and cornstarch to boil. Boil until thick stirring often. Remove from heat. Beat in extract.
