Herbed Cheese Toast
- 2 eggs
- 3/4 cup cottage cheese or ricotta
- 1 tsp chopped fresh parsley
- 1 tsp chopped fresh chives
- Salt and freshly ground pepper to taste
- 4 slices bread
Instructions:
Combine the eggs, cheese, herbs, salt, and pepper in a small bowl.
Spread over the bread and place under a preheated broiler for 3 to 4
minutes, until puffy and lightly browned.
Serves 4.
