Pineapple Fritters with Sauce
- vegetable oil for deep frying
- 1 egg
- 1 cup milk
- 3 tablespoons sugar
- 2 1/2 teaspoons baking powder
- 2 tablespoons butter, melted
- 2 1/2 cups flour
- 1 cup crushed pineapple (drain and reserve juice)
Sauce:
- 1 cup brown sugar
- 2 tablespoons flour
- 2 tablespoons butter
- 1 cup water
- 1 cup pineapple juice
- Juice of 1/2 lemon
Instructions:
Fritters:
Combine in order given: egg, milk, sugar, baking powder, butter
and flour. Add pineapple to batter last. Drop a tablespoon at a
time into hot deep vegetable oil.
Sauce:
Combine and cook until clear. Serve over warm fritters.
