Very Rich Brownies
Very Rich Brownies
- 7oz bittersweet chocolate
- 8oz butter
- 8oz powder sugar
- 5 large eggs
- 4oz each of plain (all purpose) flour and cocoa
- 1 teaspoon vanilla
Instructions:
Preheat oven to 350F. Lightly grease a small baking dish or
loaf tin and dust with flour. Line with grease proof paper which
overlaps the edge (very important for successful removal)
Melt the chocolate in the top of a double boiler or in the microwave, careful not to burn it. Cream the butter and sugar and then add the eggs one at a time until incorporated (it will look curdled, but it's OK). Add the flour and cocoa alternately and blend thoroughly. Add the vanilla and then the cooled chocolate and mix well.
Pour the mixture into the baking dish (lasagna pans work well). Bake for ten minutes, then turn it in the oven. Then bake it a further fifteen or until the cake is just cooked. It will remain really moist and delicious. Take it out of the oven and immediately remove from the pan by grabbing the edges of the paper and lifting carefully. Refrigerate until cold. It is really rich so you will want to serve it as small slices.
