Apple Walnut Cake
- 4 cups apples, coarsely chopped
- 2 cups sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1/2 cup vegetable oil
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup walnuts, chopped
Icing:
- 1 stick margarine, melted
- 1 cup brown sugar, packed
- 1 teaspoon vanilla or lemon extract
- 1/2 cup evaporated milk or whole milk
Instructions:
Combine apples and sugar; let stand. Beat eggs, and add oil and vanilla. Mix and sift flour and baking powder, cinnamon and salt. Stir in alternately with apple sugar mixture. Add walnuts. Pour into greased and floured l3x9x2-inch pan. Bake at 350 degrees for 45 minutes to 1 hour, or until cake is done. Let stand in pan to cool. Ice with lemon butter icing or whipped
cream.
Icing:
Combine all; bring to rolling boil and pour over cooled cake.
