Black Bottom Cupcakes
- 1 1/2 cups flour
- 1 cup sugar
- 1/4 cup cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup water
- 1/3 cup vegetable oil
- 1 tablespoon vinegar
- 1 teaspoon vanilla extract
- 8 oz. cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1/8 teaspoon salt
- 6 oz. semi-sweet chocolate morsels
Instructions:
Combine first five ingredients, mixing well. Stir in oil, water,
vinegar, and vanilla. Spoon batter into paper-lined muffin cups,
two-thirds full.
Combine cream cheese and 1/3 cup sugar, creaming until
light and fluffy. Add egg and salt, beating well; stir in chocolate morsels. Spoon 1 heaping teaspoon cream cheese mixture into center of each cupcake. Bake at 350-degrees for 30 - 35 minutes. Cool in pan 10 minutes; remove to rack to finish cooling.
Yield: 2 dozen
