Fortune Cookies
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 2 large egg whites
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions:
Preheat oven to 325 degrees.
Combine all of the ingredients in the bowl of a food processor. Pulse
until the batter is smooth and well-blended, about 3 minutes.
Spoon the batter onto a greased and floured cookie sheet, forming 2-inch
circles. Leave at least 2 inches between each circle.
Bake until the cookies are set and light-brown in color, about 12 minutes.
Carefully remove the cookies using a small spatula. Place a "fortune" in
the center of each cookie and fold in half, forming a half circle.
Pull the ends of each cookie together and let cool.
