Crunchy-Coated Lemon Fingers



Instructions:
Preheat oven to 375F. Grease cookie sheets or line with parchment paper. Cream butter, sugar, and egg yolk together. Add salt, lemon peel, juice, and flour; beat well. Shape dough into fingerlike rolls. Dip in egg white; roll in nuts. Bake at 375F for 10 minutes.
