Crunchy-Coated Lemon Fingers
- 1 cup butter, at room temperature
- 3/4 cup brown sugar
- 1 egg yolk
- 1/2 teaspoon salt
- 1 teaspoon grated lemon peel
- 1 tablespoon lemon juice
- 2 1/3 cups sifted flour
- 1 egg white, slightly beaten
- 1 cup chopped walnuts
Instructions:
Preheat oven to 375F. Grease cookie sheets or line with
parchment paper. Cream butter, sugar, and egg yolk together.
Add salt, lemon peel, juice, and flour; beat well. Shape dough
into fingerlike rolls. Dip in egg white; roll in nuts. Bake at 375F for 10 minutes.
