Pumpkin Cheesecake Bars
CRUST:
- 1 (16 oz) package pound cake mix
- 1 large egg
- 2 tablespoons margarine (or butter), melted
- 2 teaspoons pumpkin pie spice
FILLING:
- 1 (8 oz) package cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 (16 oz) can pumpkin
- 2 large eggs
- 1/4 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup chopped nuts
Instructions:
Preheat oven to 350 . In large mixing bowl, on low speed of mixer, combine crust ingredients until crumbly. Lightly press into bottom of 13" x 9" baking pan; set aside.
For filling, beat cream cheese until fluffy in large mixing bowl.
Gradually beat in remaining ingredients, except nuts. Mix well. Pour over crust, top with nuts and bake for 35 minutes. Remove from oven and let set until room temperature, then cover and store in refrigerator. Cut into bars.
