Almond Meringue Bars
Almond Meringue Bars
Base:
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/4 cup butter or margarine, softened
- 3 eggs, separated
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Filling:
- 6 ounces semisweet chocolate chips
- 1 cup flaked or shredded coconut
- 1/2 cup chopped almonds
Topping:
- 1 cup packed brown sugar
- 1/2 cup chopped almonds
Instructions:
Heat oven to 350 degrees.
Base: Beat sugar, brown sugar, butter, egg yolks and vanilla in large bowl on low speed until blended. Beat on med. speed, scrapping bowl constantly, until smooth, about 2 minutes. Stir in flour, baking powder, baking soda and salt. Press dough in
greased rectangular pan, 13x9", with floured hands.
Filling: Sprinkle with chocolate chips, coconut and almonds.
Topping: Beat egg whites until foamy. Beat in Brown sugar, 1
tablespoon at a time; continue beating until stiff and glossy. Spread over mixture in pan. Sprinkle with almonds. Bake until meringue is set and light brown, 35-40 minutes. Cool. Cut into
bars, about 3x1".
