Cherry Chocolate Truffle Bars
Cherry Chocolate Truffle Bars
- 3/4 cup hazelnuts
- 4 large eggs
- 2 cups packed light brown sugar
- 2 teaspoons vanilla
- 3/4 cup cold unsalted butter or margarine
- 4 ounces unsweetened chocolate
- 1 cup flour
- 1/2 teaspoon salt
- 3/4 cup chopped dried tart cherries
- 3/4 cup semisweet chocolate chips
Instructions:
Oven to 350 degrees. Put hazelnuts in a baking pan and bake 15-20 min.
until skins split. Place in a large dish towel and rub vigorously to
remove
loosened skins. Coarsely chop nuts.
Grease a 13x9" baking pan. Line pan with a double layer of foil;
grease
foil.
Beat eggs, brown sugar and vanilla in a large bowl with electric
mixer on
high speed 10 min. until mixture is thick and pale.
Meanwhile melt butter and unsweetened chocolate in a small saucepan
over low
heat, stirring often. Cool slightly. Slowly beat chocolate mixture
into egg
mixture. Stir in flour and salt until blended, then the hazelnuts and
dried
cherries. Spread batter in prepared pan. Sprinkle chocolate chips
evenly
over surface.
Bake 30 min. or until edges begin to pull away from sides of pan.
Cool on
wire rack before cutting into bars.
