Chocolate-Almond Cookies
Chocolate-Almond Cookies
- 2 cups ground Almonds, divided
- 1 1/4 cups Granulated Sugar
- 1 cup Semi-Sweet Chocolate, grated
- 1 tsp. ground Cinnamon
- 1/2 tsp. ground Cloves
- 2 Egg Whites, lightly beaten
Instructions:
Prepare several baking sheets with lightly greased aluminum foil; set
aside.
In a large mixing bowl, blend together 1 1/2 cups ground almonds with the
sugar, chocolate, cinnamon and cloves.
Add the egg whites and knead the mixture to form a stiff dough. If the
mixture is too sticky, add more ground almonds as needed. If the mixture
is crumbly, add a bit of water, one teaspoon at a time, until the
consistency is just right.
Lightly coat a clean, flat surface with a bit of granulated sugar. Press
the cookie dough out into a 1/4-inch thickness. Cut out cookies with a
heart-shaped cutter, dipped in granulated sugar. Place the cut cookies on
the prepared baking sheets as you work.
All of the cookies to stand at room temperature for 2 hours. Pre-heat oven
to 300-F degrees and bake the cookies for 15 minutes.
Remove from the oven and cool the cookies on wire racks. Store in an
airtight container those cookies that aren't gobbled-up immediately.
