Ginger Bars
Ginger Bars
- 1 cup whole wheat flour
- 1/4 cup granulated sugar
- 1/2 teaspoon baking soda
- 3 tablespoons coarsely chopped crystallized or candied ginger
- 1/4 cup each nonfat milk and molasses
- 2 large egg whites
- About 3 tablespoons powdered sugar (optional)
Instructions:
In a large bowl, stir together flour, granulated sugar, baking soda, and ginger. Add milk, molasses, and egg whites; beat until smoothly blended.
Spread batter evenly in a lightly greased square 8-inch
nonstick or regular baking pan. Bake in a 350 degree F
oven until center springs back when lightly pressed (20 to 25
minutes). Serve warm or cool; to serve, cut into 2-inch squares
and sprinkle with powdered sugar, if desired. These bars are best
eaten fresh, so serve them the same day you make them.
Yield: Makes 16 bars.
