Gingerbread Men Cookies 2
Cookie Ingredients:
- 2 1/2 cups All-purpose Flour, sifted
- 1/2 teaspoon Salt
- 2 teaspoons ground Ginger
- 1/2 cup Butter
- 1/2 cup Granulated Sugar
- 1/2 cup Dark Molasses
- 1/2 teaspoon Baking Soda
- 1/4 cup hot Water
Icing Ingredients:
- 1 cup Confectioner's Sugar, sifted
- 1/4 teaspoon Salt
- 1/2 teaspoon Vanilla Extract
- 1 Tablespoon Cream or Milk
Instructions:
Sift together the flour, slat, and ginger; set aside.
Melt the butter in a large saucepan over moderate heat. Remove the
saucepan from the stove top and mix in the sugar and molasses.
Dissolve the baking soda in the hot water.
Add the dry ingredients to the molasses mixture, alternating with adding
the soda-water and blend.
Refrigerate the cookie dough for at least 2 hours.
Pre-heat the oven to 350-F degrees and select several cookie sheets for
baking.
Roll out a small portion of the cookie dough on a lightly floured surface
to about 1.8-inch thick. cut the dough with a gingerbread men cookie
cutter, handling carefully transfer the raw dough to the cookie sheets.
Bake the cookies for 10 to 12 minutes, then transfer the gingerbread to a
rack to completely cool. Repeat the process until all the cookie dough is
used.
Meanwhile, prepare the icing by mixing together the confectioner's sugar,
salt, vanilla and cream until it is smooth and will hold its shape.
Using a decorator's tube, trim the gingerbread men with the icings,
outlining collars, or their shape, or a smiley face. After the frosting
has set, store in an airtight container.
