Southwest Beef Sandwiches
- 1 1/2 cups chopped onions
- 1 1/2 cups chunky style salsa
- 3 tablespoons chopped fresh cilantro
- 3 garlic cloves, minced
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1/4 teaspoon salt
- 1 1/2 lb. beef flank steak, cut into 6 pieces
- 8 sandwich buns
Instructions:
In a 3 or 4 quart slow cooker, combine all ingredients except beef and buns. Add beef; and mix well. Cover and cook on high
for 4 hours or on low setting for 8 hours or until beef is tender. Remove beef from slow cooker. Shred beef; return to slow
cooker and mix well. To serve, spoon 1/3 to 1/2 cup beef mixture onto each bun. If desired, top with shredded cheese or sour
cream.
