Slow Poke Jambalaya
- 1 green bell pepper
- 1 onion, chopped
- 2 medium tomatoes, chopped
- 1 cup chopped celery
- 1 clove garlic, crushed
- 2 teaspoons dried parsley
- 1/2 teaspoon ground thyme
- 1/2 teaspoon dried oregano
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 4 ounces chopped smoked sausage
- 1/2 pound boneless chicken breast, chopped
- 2 cups beef broth
- 1/2 pound cooked, shelled shrimp
- 1 cup cooked rice
Instructions:
Halve shrimp lengthwise. In slow cooker combine all ingredients except shrimp and rice. Cover and cook on low for 8-9 hours.
Turn slow cooker on high and add shrimp and rice. Cover and let cook on high 20 to 30 minutes.
