Bread Pudding
- 5 cups pulled apart whole wheat raisin bread
- 4 egg whites
- 2 cups nonfat milk
- 1 cup nonfat evaporated milk
- 1/3 cup frozen unsweetened apple juice concentrate
- 1 1/2 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1/4 cup chopped pecans
Instructions:
Spray 8-inch square glass baking dish with butter flavored
cooking spray.
Spread bread cubes in pan.
Beat egg whites, milk, concentrate, vanilla, 1/2 teaspoon of cinnamon and the nutmeg with fork until blended.
Pour mixture over bread and let soak 10 to 15 minutes.
Sprinkle with remaining 1/2 teaspoon cinnamon and the chopped pecans.
Bake in preheated 350 degree oven for 45 minutes.
Serve warm and this is great with milk.
