Cream Cheese Kolachi



Instructions:
Cream cheese and butter together. Mix in flour and salt. Make into 8 balls. Chill overnight or at least 2 hours. Roll dough out onto powdered sugar. Cut into 2 1/2 - 3 " squares. Mix together nuts, egg whites, vanilla and sugar and put a teaspoonful of filling on each square. Roll up and pinch together. Place on cookie sheet with seam down (helps to prevent spreading). Bake at 350 until lightly browned - about 15 minutes. (I make these using other fillings - lakvar, raspberry jelly, and the nut filling mixed with the jelly, for instance.)

TIP: This dough can be very difficult to work with as it tends to get too soft. If that happens, remember, it IS NOT YOU!!!!! . Make sure when you bake, this is the first one you do at that time so that the kitchen is not too hot. Work quickly and if dough gets too soft, refrigerate again until it is firm.
