Breast of Chicken Piccata
- 4 chicken breasts, boned & split
- Flour, seasoned with salt, pepper & garlic
- 1/4 Cup butter
- 3 lemons (1 for garnish)
- 3 oz capers
- 1/4 Cup chopped parsley
Instructions:
Pound chicken breasts lightly, dredge in seasoned flour and
brown in butter. Pour juice of 2 lemons over chicken. Reduce
heat, cover and cook 8 - 10 minutes. Add capers & parsley;
stir & baste chicken with pan juices.
