Bruschetta with Tomato
- 3 - 4 medium tomatoes, chopped
- salt and freshly ground pepper
- a few leaves fresh basil, torn in pieces
- 8 slices crusty white bread
- 2 to 3 cloves garlic, peeled and cut in half
- 6 Tablespoons Extra-virgin olive oil
Instructions:
Place chopped tomatoes with their juice in a small bowl. Season with
salt and pepper and stir in basil. Allow to stand 10 minutes. Toast or
broil the bread rounds until crips on both sides. Rub one side of each
piece with the cut garlic. Arrange on a platter. Sprinkle with the
olive oil. Spoon on the chopped tomatoes and serve at once.
