Shrimp Hollandaise Primavera
- 2 Tbsp Olive Oil
- 2 Chopped Garlic Cloves
- 2 Pkg's Knorr's Hollandiase or Béarnaise Sauce
- 1 LB Raw Shrimp Peeled,Deveined and Cut Lengthwise( butterflied)
- 1 Cup Sliced Zucchini
- 1 Cup Broccoloi Flowerets
- 1 8oz Pkg Fresh Mushrooms Coarsely Chopped
- 1 Bunch of Green Onions Chopped
- 1 Teasp of Tarragon
- 1/4 Cup of Dry Vermouth
- 1 Large Romano Tomato Seeded and Coarsely Chopped ,optional
- Cooked Linguini
- 1/4 to 1/2 Cup of Parmesan Cheese
Instructions:
In skillet, cook chopped garlic in olive oil, moderate heat, 3 minutes. Add already prepared sauce ( holl. or Burr. ) ( Use ONLY 3/4 to 7/8 of the liquid as Pkg. directions indicate ) *
In a bowl toss shrimp with a pinch of salt, the dried tarragon and the vermouth.
Add this shrimp mixture to the sauce in the skillet. Cover and simmer 5 minutes. Remove
lid and allow sauce to cook down a bit.
Add the veggies (except for the green onion and chopped tomato . Cook until
tender crisp.
Drain pasta well and put in a LARGE bowl and toss with the green chopped onions and tomato.
Add shrimp and sauce from skillet to bowl add 1/4- 1/2 cup Parmesan Cheese and toss.
Serve this with warm fresh french bread and a good wine.
