Adults Only Fajitas
- 2 Chicken Breasts, cut into strips
- 1 large Green Bell Pepper, cut into strips
- 1 large Yellow Bell Pepper, cut into strips
- 1 large Red Bell Pepper, cut into strips
- 1 medium Red Onion, sliced thinly
- 2 green Jalapeno peppers, finely chopped
- 2 Limes, cut in half
- 3 Garlic cloves, finely chopped
- 1/4 bunch Cilantro, leaves only
- 3 - 4 tablespoons Olive Oil
Instructions:
Chop the Garlic and Jalapenos. Then warm the oil in a non-stick skillet add the Garlic and Jalapeno - remove from heat and allow the oil to absorb the flavors while cutting the rest of the ingredients. Brown the Onion and Chicken - stirring often 3 - 4 minutes. Add the Bell Peppers. Cook for an additional 5 minutes. Squeeze the Limes over theChicken/veggies and toss in the Cilantro. Stir, cover and cook on a low flame for 10 minutes or until Chicken is done.
Serve with Tortillas and your favorite beans and Salsa and Enjoy!
