Chicken Quesadillas
- 1 boneless- skinless chicken breast - cubed (1" - 1 1/2")
- Bottled Italian Dressing
- 1/2 cup grated cheddar cheese
- 1 large flour tortilla
- tomatoes, chopped
- Jalapenos, chopped
- green onions, chopped
- sour cream
- picante sauce
Instructions:
Marinate chicken breast cubes in italian dressing for 30- 60 minutes. Saute in teflon skillet until browned. Place flour torilla in teflon skillet. Cover with grated cheese. Add chicken, tomatoes, jalapeno's, and green onions to one side of the tortilla as desired. Skillet should be on medium to med-hi heat. When the underside of the tortilla begins to brown slightly and crisp up, fold in half. (Like an omelet) Remove from skillet and cut into wedges. You can put sour cream and picante sauce on top, if you like.
They are really good served with chips and guacamole. Serve immediately.
