Praline Pumpkin Pie #3
Praline Layer:
- 1/3 cup finely ground pecans
- 1/3 cup light brown sugar, packed
- 2 Tablespoons soft oleo or butter
Filling:
- 2 eggs
- 1 cup canned pumpkin
- 2/3 cup light brown sugar, packed
- 1 Tablespoon flour
- 1/2 teaspoon cloves
- 1/8 teaspoon mace
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon salt
- 1 cup light cream
Instructions:
Preheat oven to 450 degrees.
Praline Layer: Blend all ingredients in small bowl.
Press gently onto bottom of pie shell.
Filling: Beat eggs until frothy; add remaining ingredients in order, then beat until well mixed: pumpkin, brown
sugar, flour, cloves, mace, cinnamon, ginger, salt and cream.
Pour into pie shell and bake 10 minutes. Reduce oven temperature to 325 degrees and bake 60 to 65 minutes until filling is set in center when pie is gently shaken.
