Praline Sweet Potato Pie
- 1 9 inch unbaked pie shell
- 1/3 cup finely ground pecans
- 1 cup brown sugar
- 2 tablespoons soft butter
- 2 large eggs
- 2 large or 3 small sweet potatoes
- 1 tablespoon flour
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup milk
Instructions:
Cook sweet potatoes in microwave until tender, about 10-12 minutes. For praline layer, blend pecans, 1/3 cup brown sugar and butter in a small bowl. Press gently onto bottom of pie shell with the back of a spoon. Using a large bowl, beat eggs until frothy. Peel and mash sweet potatoes. Add the remaining ingredients to sweet potatoes and beat until well mixed.
Pour gently over praline layer in pie shell. Bake at 400 degrees for 50 to 55 minutes or until a sharp knife inserted in center comes out clean. Cool on a wire rack.
