Sweet Potato Pie #3

• 2 1/2 cups mashed sweet potato (5 or 6 medium, baked)
• 1 cup sugar
• 2 eggs, beaten
• 1/2 cup evaporated milk
• 1/4 cup butter, melted
• 2 generous tablespoons bourbon
• 1 9" unbaked pie shell

Instructions:
Bake 5 or 6 medium sweet potatoes at 350 degrees for about an hour, or until done. You MUST bake the sweet potatoes for this in the oven. No nuking! Peel the potatoes and mash them, then measure. To the potatoes, add the milk, sugar, eggs and butter. Mix well. Add the bourbon last and mix well. Pour into the pie shell.
Bake at 375 degrees for about 45 minutes, or until the center of the pie tests done.
