Amaretto Cherry Cheese Pie
Amaretto Cherry Cheese Pie
- 1 graham cracker crust (your own or store bought)
- 16 oz. cream cheese
- 1 can Solo almond cake filling, not paste
- 3 eggs
- 1/4 teaspoon salt
- 1/4 cup Amaretto
- 1 teaspoon almond extract
- 1/2 cup powdered sugar
- 1/4 cup sugar
- 4 tablespoons sliced, blanched almonds
- 1 can cherry pie filling
Instructions:
Preheat oven to 350°. Blend first seven ingredients until smooth; pour into pie shell. Bake in center of oven 10 minutes. Mix 1/2 of the almonds with granulated sugar; sprinkle on pie and continue baking until puffed and golden brown (filling will sink as it cools). Cool on wire rack; top with cherry pie filling and decorate with remaining sliced almonds. Chill.
