Authentic Key Lime Pie
Authentic Key Lime Pie
- 1 can sweetened condensed milk
- 5 egg yolks
- 1/2 cup Key Lime juice (fresh is always better if you can find them)
- 1 baked pastry shell OR graham cracker crumb crust (Graham is the best)
Instructions:
Combine condensed milk, egg yolks and lime juice together until well blended. Pour into pie crust: top with meringue.
MERINGUE:
- 4 egg whites
- 6 Tablespoons sugar
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon vanilla
Beat egg whites gradually adding sugar, cream of tartar and vanilla. When thick and stands in peaks, spread over pie.
Bake at 325 for 15-20 minutes until meringue is golden brown. Chill pie before serving.
FYI ~ The meringue is not necessary if you don't want it, but it does make the pie if you have the
time to prepare it!
