Christmas Pie
Christmas Pie
- 1/2 cup sugar
- 4 tablespoons flour
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 1 envelope plain gelatin
- 1/4 cup cold water
- 3/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/2 cup heavy whipping cream
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup sugar
- 1 cup coconut
- Small amount additional coconut to sprinkle on top of pie for garnish
- 9- or 10-inch baked pie crust
Instructions:
Combine sugar, flour, and salt in a microwave safe bowl
or pitcher. Stir in milk. Microwave on high, stirring after 2
minutes and then every one minute, until mixture is thick
and has boiled for one minute. Dissolve gelatin in cold water.
Stir into above mixture. Refrigerate until partially set. Beat
with mixer until smooth. Blend in vanilla and almond extracts.
Whip cream until stiff. Fold into milk mixture.
Beat together until stiff and glossy: egg whites, cream of tarter,
and sugar. Fold into first mixture. Gently fold in 1 cup coconut.
Pour into baked pie shell. Sprinkle with additional coconut for
garnish. Let stand 2 hours or overnight.
Makes one 9- or 10-inch pie.
