Classic Banana Cream Pie
Classic Banana Cream Pie
- 1/2 cup plus 2 tablespoons sugar, divided
- 1/4 cup cornstarch
- 2 cups milk
- 2 eggs yolks beaten
- 1/2 cup butter or margarine
- 1 tablespoon vanilla extract
- 3 firm, medium DOLEŽ Bananas, peeled, sliced
- 1 (9-inch) baked pastry crust
- 1 cup whipping cream
Instructions:
Stir together 1/2 cup sugar, cornstarch and milk, until smooth
in heavy saucepan. Heat until boiling. Stir small amount of hot
milk mixture into beaten egg yolks, in bowl. Stir egg mixture
into saucepan with remaining hot mixture.
Cook over medium heat, stirring until sauce thickens and boils
about 5 minutes. Remove from heat. Stir in butter and vanilla.
Cool for 15 minutes. Fold in bananas, reserving a few slices
for garnish, if desired.
Spoon filling into baked pastry shell. Cover and chill 1 hour.
Whip cream in bowl until soft peaks form, gradually pour in
remaining 2 tablespoons sugar and continue whipping until stiff
peaks form. Spread on top of pie.
Makes 8 servings
