Chili Beans
- 1 lb dry red kidney beans
- 1 medium onion, chopped
- 2 - 4 cloves garlic, finely chopped
- 1/4 lb bacon, chopped
- 1 Tbs chili powder, or to taste
- Salt and freshly ground pepper to taste
- 1 cup red wine or chicken broth
- 3 cups chicken broth
- 1 can (16 oz) chopped tomatoes
Instructions:
Soak the beans in water overnight. Drain and combine with the
remaining ingredients in a large pot. Bring to a boil and reduce the heat to low. Simmer covered for 4 hours, or until the beans are tender and the sauce has thickened, adding more chicken broth if necessary.
Serves 6 to 8.
