Sue's Red Cabbage
- 1 head of Red Cabbage (sliced)
- 4 Slices of Bacon (diced)
- 1 Small Onion (chopped)
- 2 or 3 apples (sliced)
- 1/3 Cup Vinegar
- 1/3 Cup Sugar
- 1 Tablespoon Soy Sauce
- 2 Forkfulls of Corn starch
- Salt and pepper
Instructions:
Fry bacon and onion in a large deep skillet. Drain fat. Put in sliced cabbage. Put sliced apples on top of cabbage. Salt and pepper. Cover and cook cabbage for approximately 1/2 an hour. Mix vinegar, sugar and soy sauce. Pour over cabbage. After cabbage has become a bit soft, mash cabbage and apples up a bit with a potato masher. Mix cornstarch with about 1/4 cup of COLD water. Add enough of the cornstarch/water mixture to thicken the sauce.
